Avocado Mango Salsa

Sweet, summery mango salsa – so refreshing and perfect for this hot 100 degree weather. This is a favorite to throw onto some fish tacos, perk up a green salad, or you know, devour with tortilla chips. Or a spoon. It’s tropical and fresh, just a little spicy, and nice and creamy. All of my favorites.

Here’s what you need:

Mangos – some nice, juicy, ripe mangos. Two big ones or maybe three if they’re really small. Slice them up- here’s a little tutorial on how to slice a mango the easy way! (this eluded me for yeeaaars).

Avocado – fresh and creamy – one large one or two small. Dice it up, but not too small or it gets all smashed.

Red onion – about a half cup, diced. Other types of onions will work too, but red onions are nice and sweet and not too bitter for salads. Also, the red looks so pretty with the yellow mango and green avocado!

Jalapeño – one small one if you want just a little spice – take out the seeds and pith if you want to tone it down a bit. Add more or less depending on how spicy you want it. If you want no spice, you could sub it out for diced green bell pepper.

Cilantro – about a half cup, chopped. I LOVE cilantro, so I can’t imagine this salsa without some cilantro goodness, but if you don’t like it, you can leave it out.

Lime juice and salt – season it up with some acidic lime juice for a little punch, and don’t forget a little salt! Use a fresh lime or… don’t. This stuff works too.

Dice everything up and toss together with the lime juice and salt. This is perfect with tortilla chips, tacos, or on a salad. I served it last night for dinner with some fish tacos, and then I had the leftovers today on a salad with some black beans. Now I’m sad it’s all gone. Back to the store for more mangos!

Ingredients

  • 2 mangos
  • 1 avocado
  • 1 jalapeño
  • 1/2 c red onion, diced
  • 1/2 c cilantro, chopped
  • 1 t lime juice
  • 1/4 t salt

Instructions

  • Dice mango (slice “cheeks” off around the pit, then cut into slices, slice off skin, and dice into chunks)
  • Dice red onion, jalapeño, avocado, and cilantro and combine with mango.
  • Add lime juice and salt and combine.
  • Serve with chips, on tacos or on salad!
