Cinco de Mayo is tomorrow – quarantine edition! It’s also Taco Tuesday (whaaat?) I’m bummed I can’t celebrate this mega holiday at my favorite Mexican restaurant with friends, so tacos and margaritas at home will have to do. Make these easy peasy lemon squeezy NO SQUEEZE Margaritas to go with your Taco Tuesday Cinco de Mayo celebrations. Serve them with some barbacoa tacos or fish tacos, and this Spanish Rice!
I LOVE a good Margarita. It’s probably my favorite cocktail, because what’s my favorite food? Tacos. A match made in heaven.
HOWEVER.
Do I want to spend forever squeezing a bunch of limes? No. Do I like getting my hands that sticky? NO. Would a margarita with freshly squeezed lime juice be best? Well, ok yes, probably. But when I make margaritas, I’m usually making at least a couple (at least one for me and one for Mr. Sloth) or I want to make a big batch for friends and let me tell you. I’m NOT squeezing limes for a whole pitcher of margs. It just ain’t happening. Or maybe I just want to make one margarita, but it’s Friday night and I am so tired and squeezing some limes just isn’t on my docket for the evening.
I often use a margarita mix, but they’re usually waaaay too sweet for me, so I started making them with this recipe. Super easy, super flavorful, and not too sweet. Oh, and EASY.
I prefer my margaritas on the rocks, but you could blend these with ice and have them frozen as well. Maybe with some frozen strawberries for a strawberry margarita mmm….
The secret?
Frozen canned limeade.
I’m not sure why I didn’t think of this years ago- and maybe you have- but what does a margarita need? A bunch of lime juice. A little sweetness ….and that’s exactly what this is. It’s a little more sour than using a mix, which I like. It’s a concentrate, so you don’t have to add much. And most importantly, I can keep a few of these in my freezer at all times, so I never run out! Cinco de Mayo Taco Tuesday, I’m coming for you.
Here’s what’s in my not so secret recipe:
- Frozen limeade concentrate
- Tequila
- Water
- Triple sec
That’s it! Maybe a few lime wedges to throw in there- I can handle slicing up a few of those.
Making them for a crowd? Here’s the nice part. The concentrate is in a can… so you can use this to measure for larger quantities! Brainless and quick. Also easy to mix up round two while you’re talking to your friends. Someday. When we can hang out with friends again.
To make a large pitcher (8 servings), use:
- 1 can frozen limeade concentrate
- 1 can tequila
- 2 cans water
- ½ can triple sec
When Mr. Sloth turned 30, I had an 80’s themed taco fiesta (…is this a weird mismatched theme? Who can say… ok maybe yes) But it was great. I made a huge batch of these margaritas in one of those giant drink dispensers. I tripled this recipe, and it was so easy! Dump and pour.
Most of the time though, I like to make just a few at a time. I pour the frozen concentrate in jar with one of these pourable mason jar lids, and keep it in the fridge. Then you can pour out the amount you need for just one or two. It’s the easiest recipe, and SO GOOD! I’ve done the math and listed the amounts in the recipe below, so you can make just the right amount. For larger quantities, use the limeade can (12 oz) to measure. For smaller quantities, use a shot glass (1.5 oz size).
