It’s windy and cold, and it’s April. Even though this 30 degree weather would have seemed like a nice heat wave back in January, it feels like the arctic after having some spring weather the last few weeks. I needed some warm, comforting soup!
This is one of my favorite soups—creamy, hearty, a little spicy and… good for you? Let’s be real- I need this soup in my life this week when I’ve been hitting the quarantine snacks a little too hard. This soup has no cream, and is completely dairy free and/or gluten free if you want it to be!
